A summer birthday calls for ice cream. My daughter requested Strawberry and cookie dough ice cream cake. I accepted the challenge and kept it so easy that it only took me a total of 20 minutes to whip this up.
Here's what you'll need:
Round cake pans & plastic wrap
1 box of cake mix (I used vanilla)
2 gallons of ice cream (I used strawberry and cookie dough)
Fruit for the top
How to assemble:
Divide the cake batter in two separate pans. Bake. Cool.
I then scooped ice cream in a cake pan lined with plastic wrap to create the top layer. Place in freezer.
Then I let the remaining ice cream defrost until soft and dumped into two cake pans lined with plastic wrap. Freeze for a couple hours.
Once everything was nice and solid I simply stacked the layers on a cake plate and placed back in freezer until the party.
My daughter and her sweet friends gave it rave reviews. This was the detail that made her 12th Birthday extra memorable. I'm glad I accepted the challenge.
